1. Quinoa and Vegetable Pulao
**Ingredients:**
- 1 cup Quinoa
- 1 1/2 cups Water
- 2 tbsp Ghee (Clarified Butter)
- 1/2 cup Mixed Vegetables (peas, carrots, beans)
- 1/2 tsp Cumin Seeds
- A pinch of Hing (Asafoetida)
- 1/4 tsp Turmeric Powder
- 1/2 tsp Cumin Powder
- 1/2 tsp Coriander Powder
- Sendha Namak (Rock Salt) to taste
- Fresh Coriander Leaves, for garnish
**Instructions:**
1. Rinse quinoa thoroughly and set it aside.
2. In a saucepan, heat ghee and add cumin seeds. When they sizzle, add hing.
3. Stir in the mixed vegetables and sauté for a few minutes.
4. Add the rinsed quinoa and roast it for a couple of minutes.
5. Pour in water, add turmeric, cumin powder, coriander powder, and rock salt.
6. Bring it to a boil, then reduce the heat and simmer, covered, until the quinoa is cooked and the water is absorbed.
7. Garnish with fresh coriander leaves and serve.
2. Vrat Ki Kachori
**Ingredients:**
*For the Dough:*
- 1 cup Kuttu (Buckwheat) Flour
- Sendha Namak (Rock Salt) to taste
- 2-3 tbsp Ghee (Clarified Butter)
- Water for kneading
*For the Filling:*
- 1/2 cup Aloo (Potatoes), boiled and mashed
- 1/4 cup Arbi (Taro Root), boiled and mashed
- Sendha Namak (Rock Salt) to taste
- 1/2 tsp Green Chili, finely chopped
- A pinch of Hing (Asafoetida)
- 1/4 tsp Cumin Seeds
- Fresh Coriander Leaves, chopped
- Ghee for frying

*For the Dough:*
1. Mix kuttu flour, rock salt, and ghee in a bowl.
2. Gradually add water and knead to form a smooth dough. Cover and let it rest for 15-20 minutes.
*For the Filling:*
1. In a pan, heat ghee and add cumin seeds and hing.
2. Add the mashed potatoes, taro root, green chili, rock salt, and fresh coriander leaves. Mix well and let it cool.
*For Assembling:*
1. Divide the dough into small balls.
2. Roll out each ball into a small circle.
3. Place a spoonful of the filling in the center and fold it, sealing the edges.
4. Heat ghee in a pan and fry the kachoris until they turn golden and crispy.
