- 1 cup Sabudana (Tapioca Pearls)
- 2 medium-sized Potatoes, boiled and mashed
- 2 Green Chilies, finely chopped
- 1 tsp Cumin Seeds
- 2 tbsp Roasted Peanuts, crushed
- 2 tbsp Fresh Coriander Leaves, chopped
- Sendha Namak (Rock Salt) to taste
- Ghee (Clarified Butter) for cooking
**Instructions:**
1. Rinse the sabudana until the water runs clear, and then soak it in just enough water to cover it for 4-5 hours or overnight.
2. In a mixing bowl, combine the soaked sabudana, mashed potatoes, green chilies, cumin seeds, crushed peanuts, coriander leaves, and rock salt.
3. Heat a non-stick pan and add a little ghee. Pour a ladleful of the sabudana mixture onto the pan, spreading it to form a thin cheela.

- 1 cup Makhana (Fox Nuts)
- 1 liter Milk
- 1/2 cup Sugar
- 1/2 tsp Cardamom Powder
- A handful of Chopped Dry Fruits (Almonds, Cashews, Pistachios)

1. Dry roast the makhana until they turn crisp. Crush them into smaller pieces.
2. Boil the milk in a heavy-bottomed pan and add the roasted makhana pieces.

- 1/2 tsp Cumin Seeds
- 1/4 tsp Red Chili Powder
- 1/4 tsp Garam Masala
- A pinch of Hing (Asafoetida)
- Sendha Namak (Rock Salt) to taste
- Ghee (Clarified Butter) for cooking
- Garnish with dhaniya ( Coriander )

1. In a mixing bowl, combine fresh curd, red chili powder, garam masala, hing, and rock salt.
2. Cut the paneer into cubes and marinate them in the curd mixture for about an hour.
3. Heat ghee in a pan and add cumin seeds.
4. Add the marinated paneer and cook until it's slightly browned and the curd is well absorbed, garnish with dhaniya.
5. Serve with kuttu (buckwheat) puris or parathas.
